Niçoise Salad

There is nothing I love more than a good Nicoise salad. Packed with so many yummy proteins and veggies, it will never leave you feeling unsatisfied or hungry. I absolutely recommend trying this recipe and adding this into your weekly lunch or dinner schedule. Paired with a delicious homemade dijon dressing, this Nicoise salad is a personal must-make. Ingredients (Salad)

  • Steamed or boiled potatoes, sweet potatoes, green beans 
  • Tomatoes or cherry tomatoes
  • Hard boiled eggs
  • Olives
  • Canned tuna
  • Bed of spring mix & kale
  • White Beans (optional!)

Ingredients (Dressing) – 

  • 1 TBS dijon mustard
  • ¼ cup olive oil
  • ¼ cup apple cider or red wine vinegar
  • Fresh ground pepper

Instructions –  

  1. Combine all ingredients for dressing, mix well until smooth and set aside! Add more mustard if it is too watery.
  2. Boil all of your veggies and eggs (green beans for 2-4 minutes, potatoes for 10-15 and eggs for 8 mins). Allow the veggies to cool (can give a quick ice bath)
  3. Chop your tomatoes
  4. In a large bowl add all of your ingredients and dress with salad dressing!
