Lubieh Ruz

Lubieh Ruz is one of my absolute favorite traditional Lebanese dishes! Lubieh is a stew made with green beans, tomato sauce, and ground beef.  The mix of flavors from the different seasonings, including cinnamon, create the distinct taste of many middle eastern recipes. Served with rice on the side (see here for rice recipe)- Lubieh Ruz is the perfect delicious, one-pot, hearty meal that is easy to make and serves many! 

Ingredients – 

  • 1 pack Extra Lean Ground Beef
  • 1 Can Crushed Tomato
  • ½ cup Veggie Broth
  • 2 Carrots
  • 1 Onion
  • 1 pack Green Beans
  • 4-5 Garlic Cloves
  • Olive Oil
  • Cinnamon 
  • Cumin
  • Garlic Powder
  • Oregano
  • Salt 
  • Black Pepper

Instructions –

  1. Chop (dice) onion
  2. Grab 4-5 garlic cloves and cut them up!
  3. Cut carrots into small cubes
  4. Put onion, garlic, carrots into large pot with 1/4 cup olive oil and put on medium heat
  5. Stir & sauté until onions are translucent!.
  6. Once translucent, add 1 pound extra lean ground beef into pot
  7. Break meat up in the pot and stir until meat is brown
  8. ** add in spices!! (1/4 teaspoon each) ** Cinnamon, black pepper, cumin, garlic powder, oregano. If you have, use: all spice (cinnamon, ginger, cloves, nutmeg, black pepper)
  9. Then add green beans (make sure washed and ends are cut off and beans are cut in half or thirds)
  10. Stir everything 
  11. Once greens beans are a neon green color, add 1 can of crushed tomato and ½ cup veggie broth/ stock.  Stir all together.
  12. Let cook on medium heat for 15 min & then on low for 15 min or until you’ve finished the rice
  13. Serve and don’t forget to add fresh squeezed lemon on top + my favorite Trader Joe’s Sriracha 🙂
