


This chicken and potatoes recipe is the perfect staple meal for a spring or summer night with family and friends- or when you don’t know what else to make. It is extremely easy to cook and only requires some light chopping and seasoning. The mixture of zest and sweetness in this chicken and potatoes recipe is the absolute best combo that I’m sure everyone will love! Top it off with some sriracha and enjoy!
Ingredients
Chicken –
- Dried oregano
- 4-5 Garlic cloves
- 1.5-2 Lemons
- ¼ cup Olive oil
- 2 tbsp Dijon mustard
- 1.5 tsp Paprika powder
- Sea salt
- Black pepper
- Skinless chicken breast thin sliced (trim fat) – PACK OF 3 or 4
Potatoes –
- Sweet potatoes
- Regular potatoes
- Whole garlic cloves
- Sweet onion
- Bell peppers
- Oregano
- Paprika
- Salt
- Black pepper
- Olive oil
Instructions
Chicken –
- Put chicken breasts in a bowl
- Marinate with 2 tbsp mustard, juice 1.5 to 2 lemons, pinch of salt, crushed black pepper, 1.5 tsp paprika, 4-5 crushed garlic cloves, 1/4 cup olive oil, 1.5 tsp oregano
- Mix well with chicken and marinate for 1 hour in a bowl (30 minutes is fine too if short on time)
- While the chicken is marinating, prep your oven and potatoes (see below for potatoes instructions)
- Set oven to 375
- Once the chicken is marinated, transfer into a deep dish pyrex oven dish
- Put 1/4 cup water in pan
- Then put the chicken into the oven for 40 min. Check @ 30 min (lower to 325 if getting burnt)
- Remove from the oven and enjoy!
Potatoes –
- Set oven to 375 F
- Chop all your veggies up (potatoes, onion, garlic and bell peppers) coat with olive oil and spices (oregano, paprika, salt, pepper) I eyeball everything – use hands to mix well and make sure everything is evenly coated!
- Put in the oven and roast for 35-45 minutes
- Remove from the oven and enjoy!
